| Tomato Sauce | ||
|---|---|---|
| Qty | Unit of Measure | Ingredient |
| 2 | cans | pear tomatoes in juice |
| 1/2 | "thing" | garlic, sm to medium |
| 1 or 2 | tiah hots [peppers] | |
| olive oil | ||
| 1 | tbsp | sugar |
| salt | ||
| pepper | ||
| parsley ... I use dried, but you can use fresh ... but less |
||
| 1 | tsp | anise |
| Directions:
Chop the garlic and the tiah, fine, I use the chopper on the blender because the peppers will burn your fingers and eyes. lightly brown, hardly at all, in the olive oil. Use enough oil to just barely cover the garlic. More won't hurt. When the garlic is ready, add the tomatoes. Puree first. Add sugar, about 1 TBSP. Salt and pepper to taste ... you can add this as you like after it starts to cook. Parsley, lots ... this you can also add if you want more. Anise, about 1 TSP ... crush it in the palm of your hand before you add it. Let cook a couple of hrs ... at least ... more won't matter. That's all ... you may need to try it a couple of times til you get it to your liking ... |
